Hi everyone! This is @whatcherylate over on Instagram and I’m so excited to be writing a guest post for Dharma Bums. As the weather gets colder in Australia, over here in Canada on the other side of the world, it’s heating up. I’m still jealous that the coldest day in Australia would probably be a cool fall evening in Canada. Nevertheless, to make sure you stay warm and keep your bellies’ happy, I’m going to share some of my go to winter recipes. They are both vegan and can easily be adjusted for any dietary needs.
I’m going to start off with my favourite breakfast for the winter that is super quick to whip up and very filling:
Vanilla Chia Oatmeal.
- ½ cup oats (rolled or steel-cut will work)
- 1 cup unsweetened vanilla almond milk
- 1 tsp pure vanilla extract
- 1 tsp chia seeds
- Any toppings of your choice (fruit, granola, nut butters, etc.)
Add the oats, almond milk, vanilla extract and chia seeds into a pot over medium heat. Keep stirring until it reaches your desired consistency. Pour into a bowl and top with your favourite toppings! The choices are endless and totally customizable to what you like. I would recommend fresh fruit, granola, peanut butter and shredded coconut.
The other recipe I’d like to share with you is my perfect winter dessert: blueberry cobbler topped with banana ice cream.
Preheat the oven to 375 degrees. Grease a baking dish with coconut oil and put the blueberries in. Squeeze some lemon juice over the berries and mix. In a separate bowl, combine the almond flour, coconut oil, vanilla and stevia together with your hands and sprinkle the mixture overtop the blueberries. Bake in the oven for 40 minutes.
For the banana ice cream, simply blend the frozen bananas in a food processor. If you find that it is having difficulty blending, you can add some almond milk to help it blend. Blend until it reaches a frozen yogurt-like consistency.
